My parents sent the leftover turkey home with us. Besides sandwiches (and just recently a kick-butt stromboli) turkey tetrazzini is the first thing I make after Thanksgiving. I used
this recipe. It was good. The kids were happy. And besides the four cups of cheddar that it called for, it isn't too bad in the fat department. I used whole wheat spaghetti noodles and
Smart Balance Light instead of butter. (I'm not sure which is worse: high-in-saturated-fat butter or questionable-man-made margarine. I go back and forth.) Finished her off with some steamed broccoli.
