penne + zucchini + broccoli

Cottage cheese + spinach + toasted walnuts + basil + parmesan = yummy-yumminess

Dinner came out of Moosewood Low-Fat again. The above ingredients were blended in my food processor and served over whole wheat penne pasta. Think creamy sort-of pesto. I served it with blanched broccoli and broiled herbed zucchini and tomatoes.

It tasted so good. I ate entirely too much. Are we surprised? I thought not.

how much of each ingredient do i need! i am making this!

10 oz fresh spinach
1/2 c toasted walnuts
2 c cottage cheese
1 garlic clove
1/4 c parmesan cheese
1/4 c fresh basil
1/2 tsp salt
pepper to taste

wash the spinach and with the water clinging to the leaves, cook in a large pot, med-hi, 4 mintues (wilted yet still green). add everything, incldg spinach to a food processor. that's it! it makes a ton so you'll probably want to half it. it probably will cover at least 2 lbs of pasta.

made this last night! it was AMAZING. it isn't often that something so easy, tastes so yummy. so glad you shared this with me. i will be making this again and again.

yay! i couldn't believe how fast it was either. love finding simple, delicious recipes that they don't expect you to find a can opener for. ;-)
